1lbsweet potatoes, peeled
1lbcarrots (about 4 large)
1medium yellow onion
2lbstop sirloin
3tbspreduced-sodium soy sauce
3tbspoat bran
1cuplow-sodium beef broth
pinchchopped parsley (optional)
  1. Preheat oven to 325 degrees.
  2. Chop vegetables and meat into large chunks. Keep meat and veggies separate.
  3. Combine soy sauce and oat bran in a Dutch oven or large baking pan.
  4. Add meat to sauce, tossing to coat. Add vegetables, broth and water. Cover and bake for 1 1/2 hours, or until vegetables are tender and beef is cooked. Top with chopped parsley, if desired.

  • I don't have a dutch oven so I just use a 9x13 pan and an 8x8 pan and divide the stew between the two. I cover them both with aluminum foil.

    Because the pans aren't as deep as a Dutch oven, I only have to cook it for about an hour and 10 min.

    When I don't have fresh parsley, I still like to top it off with a little dried parsley - it gives it that fresh little kick.
